從來沒想過派皮是這麼簡單的料理
好適合全家大小一起揉
除了奶油比較容易融化的缺點要注意外 可以說是零失敗料理
所以這道食譜通常都是天氣冷時方便製作
我想吃了這麼高熱量後
衣服可以穿多點,也比較看不出來偷偷變形的身材吧 太棒了~
冬天跟派簡直是絕配阿~
Quiche Lorraine 法式鹹派
Ingredients:
·
Short Paste: 200g flour, 100g butter, 50ml water, salt
·
Filling : 100g Bacon, 60g Gruyere Cheese, 30g Oniondiced, 2 eggs, 100ml Milk, 100ml Cream

Pastry Method:
·
Rub butter into flour to form a sandy texture
·
Make a bay in the middle add water and mix to smooth dough.
·
Wrap in plastic wrap and rest for 30 minutes
·
When rested roll out to approx. 3mm thick and line a flan tin
·
Blind bake at 150 degree
Filling Method:
·
Sauté bacon and onion, let cool
·
Mix eggs, cream and milk, thoroughly
·
Place bacon, onion and cheese in the cooked pastry case and pour over
custard mix
·
Bake in oven 160 degree for 30-40min. Until set.
Pastry Cream 卡士達醬(克林姆醬)
Ingredients:
·
A. 20g Sugar, 40ml Milk, 2 Egg yolk, 20g plain flour, 10g corn flour
·
B. 300ml Milk, 35g Sugar, Vanilla
·
C. 100ml Whipping cream, 10g Sugar
Method:
·
For A. Combining sugar and egg yolk together, and mix milk, plain flour
and corn flour together, then those two mixture to a smooth paste
·
For B. Pour the milk into a saucepan
·
Next add the sugar by dropping it evenly over the whole surface (do not
stir as the sugar acts as an insulator and prevents the milk from sticking to
the pan)
·
Place on heat and bring nearly to the boil
·
Now slowly pour the hot milk into the paste from A. while stirring to
avoid limps
·
Place back in the pot, bring to boil and simmer for 2 minutes
while continuously whisking vigorously
Fruit Small Tart 水果塔
Ingredients:
·
Flan Gel: 100g Flan Gel, 75ml
water
·
Any fruit you like
Method:
·
Mix together and bring to the boil
·
Glace Fruit with hot flan gel mixture
·
Water can be replaced with fruit juice
